'Talent speaks for itself': The Brown Hotel announces new executive chef

LOUISVILLE, Ky. — An iconic, 100-year-old hotel in downtown Louisville announced Wednesday it is hiring a veteran chef with over 30 years of experience as its new executive chef.

The Brown Hotel is welcoming industry leader and world-renown chef Gary Palm to its culinary team as well as to Louisville's budding food scene.

“Chef Palm brings a wealth of knowledge and expertise to our team and his standout talent speaks for itself,” General Manager Brad Walker said. “We are delighted to have him leading our outstanding kitchen staff and know he will greatly contribute to the continued success of our historic, award-winning culinary program.” 

Chef Palm has worked for five-star hotels and Michelin star restaurants around the world including in the United States, China, France, India, Indonesia, Monaco and South Korea.

According to a Brown Hotel news release, Palm helped open several kitchens at hospitality brands such as Ritz-Carlton, InterContinental, and Taj Hotels and Resorts. Most recently, he returned home to the United States to lead the kitchen at the Trump International Hotel & Tower in Chicago.

“I look forward to bringing my worldwide culinary experience to create dishes using beautiful products from the local farms of our region,” Palm said. “I aim to inspire and continue to develop our talented team to become leaders in the industry.” 

Palm earned a culinary arts degree from Johnson & Wales University, then completed an apprenticeship in Mougin, France when he was just 22 years old. He would go on to become the only American selected in the All-French culinary finals of the prestigious Prix Culinaire Taittinger for three consecutive years.
