Why is the world's largest inland lobster tank in Louisville?

Louisville is home to bourbon, bats and horse-racing. Now add some of the world's finest lobster to that list.

LOUISVILLE, Ky. (WHAS11) -- You don't have to go to the coast to find the home of the world's largest inland lobster tank.

Louisville is home to bourbon, bats and horse-racing. Now add some of the world's finest lobster to that list.

For the past decade, the best lobster in the world is shipped has been shipped to a facility of Poplar Level Road in Louisville before it goes off to some pretty fancy restaurants.

It may look like an ordinary warehouse but if you take a closer look you'll find 8 to 10 pound lobster direct from Nova Scotia, in fact there's a total of 30,000 pounds of lobster stored there.

'There's not many people that know about us,' said Paul Valdez, the Operations Manager for Clear Water Fine Foods.

The two tanks are 30 by 40 feet each and four feet deep. Every crate filled with lobster shipped in once a week.

So why is it in the middle of Louisville? Paul Valdez, the operations manager for Clear Water Fine Foods says its all because of UPS.

'You'll see it closer to the shore but no one has been crazy enough or willing to take that risk to bring it in way out here. You have to figure there is a lot of money invested in making your salt water, you got to chill the water,' said Valdez.

Once a week the lobster spend a day in the spa as its called, then 24 hours later UPS overnights it to some of the finest restaurants in the country such as The Palms in D.C., Nashville, Ruth's Chris in Las Vegas and Chicago coast to coast.

'Basically we got to keep the water at 39 degrees, 24 hours a day seven days a week. The filtration system keeps all the ammonia and nitrate levels just right so the lobsters will stay alive. We make all our own salt water cause there is no salt water in Kentucky, ' said Valdez.

'This actually works better than pumping it straight from the ocean. We are cleaning the water. It's being cleaned more than it would from the ocean,' said Valdez.

Clear Water Fine Foods is open to the public five days a week.
