LOUISVILLE, Ky. (WHAS11) – One local business owner's sweet dreams became a reality as she celebrated the grand opening of a new bakery in Old Louisville.
Shacole Henderson, along with Mayor Greg Fischer and other city officials, were on hand to celebrate the opening of Coco's Cakes near 4th and Oak.
Henderson, a 5-year cake baking veteran, has been creating and designing delicious treats such as wedding and birthday cakes, cupcakes, chocolate-covered strawberries and more.
The location was a no brainer for Henderson since the area is seeing major growth.
"We liked the location because we heard about them doing a revitalization down here and wanted to better the neighborhood, so we wanted to be part of it," Henderson said.
Henderson participated in Louisville Metro Government's Micro Business Program, a low-interest loan program that helps small business owners get the start.
"Coco's Cakes is one of more than 100 micro-enterprises to get their start since the program started in 2010," Fischer said.
Fischer says Henderson paid off her initial $5,000 loan and when the popularity of her business grew, she received another loan to expand her business.
Her love for the art of baking started in the family.
"My grandfather was a culinary chef. We grew up as young kids – we came in the kitchen, just playing around and I never knew it would turn into something when I got older."
Henderson says although she wanted something fancy for the name, her grandfather was responsible for the business' name.
"I wanted a big fancy name and he said 'no, something simple that's all you need.' He said if something is good, it will speak for itself. Just keep it simple and call it Coco's Cakes," she said.
The grand opening ceremony also featured giveaways, free samples, discount coupons and door prizes.
Coco's Cakes will soon offer free WiFi at its eat-in facility.
Coco's Cakes is located at 501 West Oak Street. For more information, visit their Facebook page.
