'Mobilize us as citizens': West Louisville summit discusses food insecurity in Metro

It was a day full of community conversations and a resource fair.

LOUISVILLE, Ky. — The 7th annual Economic Mobility Summit in west Louisville talked on Friday about the state of food insecurity in the Metro.

It was a day full of community conversations and a resource fair.

This year's keynote speaker was Rev. Vincent James, the president and CEO of Dare to Care Foodbank.

Some of the workshops included tackling healthy foods, Urban Hydroponics and farming, and emerging trends in food production.

Kevin Fields, Sr. helped lead the summit, and said it's all about creating a united force.

"The idea behind the summit is to mobilize us as citizens in the community, to come out, face our challenges, come in, network and strategize solutions to those problems and then move forward in a more positive direction," Fields said.

In Kentuckiana, 1 in 6 children experience food insecurity.

"Food is the most important economic issue we are faced with because we have to eat every day," Fields said, adding anyone with a fixed income has an additional challenge when trying to buy fresh food.

"That's why this is important today that we are addressing this issue," Fields said.

Fields said there is a special concern in west Louisville where the lack of fresh food also leads to unhealthy eating habits.
